Walnut And Mushroom Steak En Croute

Ingredients:
2 TBSP OLIVE OIL
50 G ( 2OZ ) FINELY CHOPPED MUSHROOMS
2 TBSP FINELY CHOPPED WALNUTS
1 TBSP CHOPPED PARSLEY
2 X 110G ( 4OZ ) PIECES FILLET STEAK
350G (12OZ) SHORTCRUST PASTRY
1 BEATEN EGG


Walnut And Mushroom Steak En Croute
Method:
1 PREHEAT THE OVEN TO 200 C (400 F) GAS 6
HEAT 1 TBSP OF OLIVE OIL IN A FRYING PAN AND COOK THE MUSHROOMS OVER MEDIUM HIGH HEAT FOR 2-3 MINS, UNTIL SOFTENED AND GOLDEN.
ADD THE WALNUTS AND PARSLEY AND COOK FOR A FUTHER MINUTE. SET ASIDE

2HEAT THE REMAINING OIL IN THE FRYING PAN AND COOK THE STEAK FOR 30 SECONDS ON EACH SIDE TO SEAL. REMOVE FROM HEAT

3 ROLL OUT THE PASTRY AND CUT TWO ROUND PIECES THAT ARE 5 CM ( 2 IN) LARGER THAN THE STEAKS. SPOON HALF OF THE WALNUT MIXTURE IN THE CENTRE OF EACH PASTRY CIRCLE, THEN TOP WITH THE STEAK, FOLD THE PASTRY OVER THE STEAK TO MAKE PARCEL, SEAL BY PRESSING THE ENDS TOGETHER WELL.
PLACE SEALED SIDE DOWN ON A LIGHTLY GREASED BAKING TRAY

4 LIGHTLY BRUSH EACH WITH BEATEN EGG AND BAKE IN THE OVEN FOR 20 MINS UNTIL GOLDEN AND COOKED THROUGH,

SERVE HOT WITH A GREEN SALAD AND BABY POTATOES
